Intro: JJ’s Diner had been operating out of the same building on Route 6 for over twenty years, and the kitchen showed it. The owner approached us about a full commercial kitchen renovation — new layout, updated ventilation, replacement of worn flooring and wall surfaces, and a reconfigured prep area to improve the workflow for her staff. Work was scheduled in phases across three weeks to allow the dining room to remain open with limited service during construction. We coordinated closely with the equipment supplier and health department inspector to make sure everything was ready for reinspection on schedule. The kitchen passed on the first walk and reopened fully within the planned window.
